Stanley is a two-storey Cantonese restaurant inspired by the moody waterfront of Hong Kong’s picturesque Stanley Bay. Featuring glamorous dining areas, private dining rooms and a riverfront deck, it has 220 seats across its two levels, with a casual bar area attached to the side.
Stanley’s historic façade and the Brisbane River run either side of the front deck, making it the ultimate location for dining or enjoying a lazy cocktail or two. Fully retractable awnings overhead and circulating misting fans provide comfort year-round whilst guests nestle into an assortment of both high and low furniture with panoramic views spanning from the Story Bridge to the city skyline.
Stanley’s philosophy is centred around great food, friends, fishermen and farmers. Inspired by Head Chef, Louis Tikaram’s travels across the globe and grounded by his local roots, Stanley’s menu showcases some of the best seafood, meat, vegetables and fruit in the world.
Stanley’s ethos combines the best produce, mostly sourced locally, supporting the Australian industry with traditional Cantonese flavours. Tikaram’s fresh perspective and mindset of venturing outside the box adds to the unique experience at Stanley.
The highlight of this establishment shines through in their Cantonese-Style Roasted Duck, a culinary masterpiece achieved through a meticulous four-day journey of brining, drying and roasting. Such precision characterises the essence of Stanley.
Every facet, from the thoughtful handling of locally sourced ingredients to the deliberate allocation of distinct kitchen areas, and even the interior designed by Fellow Interiors, which has adorned the historically significant former water police headquarters with elements like parquet flooring, lavish textiles, watercolour murals, and charming lanterns – all harmonise in a comprehensive display of mise en place that encompasses the entire venue.
