Exhibition is located in the basement of the heritage-listed Metro Arts building. The building has a long history of performance; originally, the basement was used to house travelling performers while they appeared in the theatre upstairs.

That history was instrumental to Scott when choosing Exhibition’s location. He wanted Exhibition to build on that history of performance and be a kind of exhibition in its own right. Scott’s vision for Exhibition is not only that of a restaurant, it is truly a theatrical experience. Showcasing local produce delivered daily from select growers, artists, custom cutlery and ceramics, and supporting artisan wine and spirits, Exhibition is about more than simply food.


Produce for the restaurant arrives every morning and is prepared by the kitchen daily. Scott works closely with local farms to use the best of their in-season fruits and vegetables. Diners are seated around the open kitchen, watching and interacting with the chefs. Chefs explain each dish on the degustation menu and provide a direct link to those producers and a rare chance to interact with the people responsible for creating your food.


Paying homage to his love of a myriad of Asian cuisines, the degustation menu is heavily inspired by Japanese omakase dining, handing the chefs full autonomy for each experience. Every diner starts with a variety of snacks, showcasing the unique produce Scott and his team get to work with daily. Expect to see menu items using king prawns, abalone and scampi, 9+ wagyu and venison, each in a different bite-sized morsel. You might finish your meal with a piece of exotic fruit, dusted in sherbet, or brown butter ice cream with black truffle.


Outside the dining room, Exhibition boasts an intimate wine bar showcasing unique spirits, wines and a selection of house-made cocktails. Scott’s influence is everywhere in the restaurant. From the architecture and design to hands-on building and project managing the fit-out from an empty space into the restaurant it is today, the music, the murals and the custom-built hibachi that dominates the kitchen, Exhibition was built to be his stage.
