Bar Liberty, located on an unassuming corner along Fitzroy’s Johnston Street, is a delightful restaurant and bar that embodies a simple yet successful formula.


The minds behind this fantastic venue are Casey Wall and Manu Potoi, known for their work at Rockwell and Sons. Their laid-back approach is evident in every detail, from the revamped bar globe to the champagne sabre used to elegantly open champagne bottles. The bar’s quirky name, inspired by an obscure Star Wars III quote, adds a touch of playful charm. And for a unique experience, patrons can savour bourbon from a vintage 1956 Ford Thunderbird.

The ever-changing menu is divided into snacks and larger sharing plates, showcasing a variety of culinary delights. You can expect to encounter lesser-known ingredients like kiwani, a peculiar horned fruit with a flavour reminiscent of a sour cucumber or an unripe banana. For heartier options, indulge in the delectable Pork Collar Steak from Meatsmith, served with garlic shoots and labneh.

Wine enthusiasts will find their taste buds tantalised by the thoughtfully curated wine list, striking a perfect balance between new, exciting, biodynamic or low-intervention wines and timeless classics. Notably, Bar Liberty features custom-made red and orange wines from Pennyweight Wines in Beechworth and Tom Shobbrook from South Australia, which are conveniently served on tap.

Behind the scenes, the culinary team, led by Head Chef Zackary Furst and Executive Chef Casey Wall, creates a menu that skilfully blends modern influences with refined and pared-back techniques.
