Just like the raw interiors in which they reside, the work at ESSA is simple but considered. It is believed that less, when done with modern consideration and traditional finesse, really is more.
The menu is based upon educated sourcing decisions from a network of select farmers, hunters and providores, coupled with a steadfast vision from the kitchen to respectfully take the day’s bounty to a place that is complete. Put simply, the team works to send fare from their pass or raw bar to the floor in a moment where nothing lacks, but no more should have been done. You will discover food that is a symphony of flavours, with each dish telling a unique story. From delicate seafood creations that celebrate the bounty of the ocean to robust meat dishes that pay homage to the land, every plate is a testament to Phil Marchant’s culinary mastery.
Phil’s commitment to sustainability is evident, as he sources ingredients from local farmers and fishermen, ensuring that each dish supports the community and the environment.
ESSA exists as a space for multiple outings. Perhaps a spontaneous small midweek meet ups, where just a few quick share plates - possibly with a glass of wine (or two) - are informally enjoyed with friends. Or perhaps a celebratory booking made well in advance - a night where multiple servings are encouraged, and conversations linger long into the night.
Essa is not just about the food—it’s about the entire dining experience. The attentive and knowledgeable staff cater to every need, ensuring that guests feel pampered and well taken care of. The extensive wine list, curated with precision, offers the perfect pairing for each dish, enhancing the overall dining experience.
