Nick Holloway
Nick Holloway has been cooking professionally for the past 28 years. His culinary adventures have seen him work in some of Australia’s most prestigious restaurants and allowed him to participate in and present at a diverse range of “foodie” events both throughout Australia and abroad.
These days he lives and works in Palm Cove and is the chef & co-owner of Nu Nu Restaurant (est. 2004), Numi Ice Creamery & Nu Nu Events & Catering. Nick celebrates a ‘barefoot luxury’ approach to living, cooking and exploring in Tropical North Queensland.
Inspired by the dramatic landscape, agricultural diversity and truly unique produce, Nick’s cooking champions big, bold and bright flavours that encapsulate the spirit and stories of the region.
He regularly changes the menu to suit the season – imagine dishes like Kimchi Butter Poached Reef Fish with squid ink noodles in a corn and seaweed broth, or Sugar Cane Smoked Duck with BBQ radicchio, rhubarb and pickles. Always fresh, local and seasonal.
Nick has appeared on MasterChef Australia as a guest chef multiple times, plus a string of other TV shows, podcasts, magazines and print media over the years.
He was recently asked by Tourism & Events Queensland to travel to New Zealand as a Queensland Food Ambassador to showcase the tropical food bounty that the Sunshine State has on offer.
Nick is regularly mentioned in the pantheon of Australia’s great chefs, and his knowledge of the Tropical North is highly sought after by tourism, media, industry and the like.
