In the world of Australian gastronomy, few chefs have captured the essence of the land quite like Julian Hills. Hailing from the picturesque Strzelecki Ranges in Victoria, Julian’s culinary journey began on a 16-hectare hobby farm where he was intimately acquainted with the ways of nature. Embracing a lifestyle of raising animals, fishing, gardening, foraging, and hunting, Julian developed a profound respect for the ingredients he would later wield as a chef.

Julian’s culinary prowess was honed through various stints at esteemed establishments including Blush Food Room, The European, Middle Brighton Baths and the Courthouse Hotel. However, it was his time as Head Chef at Paringa Estate on the Mornington Peninsula that truly solidified his reputation.

Within a year of taking the helm, he was bestowed with a prestigious chef’s hat by the Good Food Guide - a recognition he would maintain for an impressive five years. The crowning moment came in 2023 when Julian was named Good Food’s Victorian Chef of the Year, a testament to his exceptional talent and dedication.

Julian’s relentless pursuit of the freshest, most environmentally-conscious ingredients has led him to foster meaningful relationships with like-minded farmers and producers, ensuring that only the best finds its way to the table at his acclaimed restaurant, Navi. And what sets him apart is not just his culinary expertise, but his profound commitment to sustainability and ethical farming. Drawing inspiration from his surroundings, he sought the knowledge of Indigenous foragers, learning how to source native seasonal produce responsibly and incorporating these unique flavours into his menu.

With a degree in Fine Arts, specialising in ceramics and drawing, he infuses his artistic flair into the dining experience at Navi. Every dish presented is served on delicate, handmade plates and tableware crafted by Julian in his makeshift home studio. Drawing inspiration from the organic shapes and textures of the Australian landscape, his ceramics add an earthy and rustic charm to the dining ambiance.
