Chao Harnthae
Chao Harnthae hails from Isan, the Northeastern area of Thailand, where he began his culinary journey at the tender age of twelve.
Driven by a desire to be independent and provide for his family, he started his career on the streets of Isan, mastering the art of cooking with a wok.
For years, he dedicated himself to learning authentic Thai recipes and cooking techniques, honing his skills to perfection. As a man of many talents, Chao had aspirations of becoming a superstar. In his early 20s, he moved to Bangkok to pursue a singing career, performing in various venues.
Fate intervened when one of the venues needed a chef, and Chao stepped up to the plate. His outstanding performance in the kitchen led to a permanent transition to the back of the house, where he continued to shine.
Seeking to expand his culinary horizons, Chao embarked on a journey to Melbourne. There, he worked in restaurants, refining his skills and immersing himself in the city’s vibrant culinary scene. In 2003, Chao joined Cookie, and to this day, he remains an integral part of the team, sharing his expertise and training young, upcoming chefs from Thailand, many of whom go on to open their own restaurants and flourish in the mecca of Melbourne.
Chao has mastered the art of authentic Thai cuisine and is passionate about using fresh Australian ingredients to create modern and vibrant dishes that reflect the essence of the city we live in. His recipes are brave and exciting, combining his decades of experience using traditional Thai cooking techniques with bold and considered combinations. His infectious smile and singing keep spirits high in Cookie’s kitchen, Choa’s dishes are not only served with skill, but they’re made with love.
